とり天 (toriten)-Chicken Tempura

Toriten is a local dish of Japan’s Oita Prefecture.

In Oita Prefecture, Toriten is often seen in many restaurants, and local people are very familiar with the cuisine. 
Some people prefer crunchy texture, and some prefer soft texture. 

 

Since this is a local cocking, I did not know about triten when I was in Japan.  I have a friend who is living in the U.S taught me about the dish and its recipe.   So I cocked it by myself, and I was amazed by its taste.


Chicken is available in anywhere in the U.S., so Toriten is one of the easiest Japanese cuisines for people live in the U.S, like me. 

 


INGREDIENTS

 
Chicken 4 block (
thigh meat is recommended)

Sake                   2tbs 
soy sauce          2tbs
garlic          2 pieces (grated)
ginger            1 slice  (grated)

Flour          2 / 3 cup 
Starch        1 / 3 cup 
eggs                         2
mix water with eggs and add water until the total reaches 1 cup

 


Let’s Start Cooking!!

 

Chop chicken into cube

 

Mix all A, and soak the chicken into it approximately 2 hours.

 

Mix all B and make a batter of the tempura

 

Dip it into a batter and fry chickendscn2994

* attach the batter one by one carefully by hand and drop unnecessary batter

 


Wait until chicken turns to browndscn2995

 

Eat with soy sauce & mastered or with Ponzu are recommended.

照り焼きピザーTeriyaki Pizza

Chicken Teriyaki Pizza (Japanese Style Pizza)

 

Teriyaki is very familiar in the United State with the name of Chicken Teriyaki

In the United State in general, Chicken Teriyaki is grilled chicken with commercial teriyaki sauce.

 

In Japan, the word Teriyaki writes 照り焼きin Chinese letter.  照りmeans a shine or luster given by the sugar and mirin.  焼きmeans cooking method of grill.  In Japan fish such as Japanese amberjack or swordfish are mainly used for Teriyaki.  Like the chicken, Fish is grilled is pan on both sides with sauce to get luster on fish.  Teriyaki in Japanese cooking technique is very general and the flavor is familiar.

 

McDonald’s in Japan has original recipe of Teriyaki burger which very favorable for Japanese. 

And like Pizza Hut and a lot of pizza chain sell teriyaki pizza.

Today I will introduce very popular Japanese Teriyaki Pizza.

The firs thing is how to make Chicken Teriyaki and then make Teriyaki Pizza.

 

 

Chicken Teriyaki

 

INGREDIENTSdscn2982

 

Chicken thick 400-500g

Cornstarch

Salt and papper

 A

Soy saucetbs

Sweet rice wine (Mirin)tbs

Sugar 1 1/2ts

Grated ginger1tsp

 

Chop chicken into bite-sized piece, salt and pepper to chicken.  And dredge with cornstarch.dscn2983

 

Mix All A

 

Heat oil in a pan and grill chicken until brown

 

When it gets brown, cover with lid and grill 5 min with low heat

 

Take the lid, add mixed A and cook in medium heat until sauce gets thickened.  Shake a pan when you mix (dress chicken with sauce) dscn2986

*cook a little longer if you use chicken for pizza.  Stronger flavor suit for pizza

 

 

 

Pizza dough

 

You can buy commercial pizza dough, but if you really want a real crispy crust, you can make it with this recipe!

 

 

INGREDIENTS (30cm X 2)

Bread flour60g

All purpose flour60g

Pinch of salt

Dry yeast tsp

Warm water 5〜6tbs

Olive oil tbs

 

Mix Bread flour, all purpose flour, and salt in a bowl.

 

Mix dry yeast with warm water

 

Add mixed warm water to bowl and check the dough’s softness

 

When dough comes together, add olive oil and knead it until comes togetherdscn29341

 

Leave it an hour at warm place

 

Cut it in half and roll out the dough so that it gets as thin as possible with round shapedscn2938

 

 

Let’s make Pizza

 

INGREDIENTS

Chicken Teriyaki

Mushrooms

Spring onion

Corn

Dried seaweed (Nori)

A

Mayonnaise tbs

Say sauce 1 1/2tsp

Chili powder 1/3tsp

 

 

 

Spread mixed A on pizza doughdscn2987


Spread Chicken, mushrooms, and Corn.  Then add lightly chopped onion on top

 

You can decorate with mayonnaise at lastdscn2988

 

Bake 5-8 min in 450F oven

Tandori Chicken

Tandori Chicken is one of the most famous Indian dishes.  It is my most favorite Indian side dish and great to eat with Indian Curry and Lassi (Indian Yogurt Drink).  

Lassi is very common drink in India and you can buy Lassi very easily in the town.

Tandori Chicken is usually baked in huge pot-shaped oven and chicken is on skewer.

Today I will introduce Tandori chicken which is not too spicy and easy to cook.

Chicken wings              7 pieces

(This time I used Chicken thick)

A

Plain Yogurt                     400cc

Ketchap                              3tbs

Curry powder                     1tbs

Honey                             1/2tbs

Chili paper           1/2 tsp -1tsp

*if you like spicy food, you can add more

 


Let’s start cooking!!

 

Set yogurt like this picture and leave it half a day in fridge

(it will eliminate extra water from yogurt)

Add chicken into a bag.  And rub mixed sauce into Chickendscn2827

 Leave it in fridge 1 to 2 days

 

 

Take Chicken out from a bag and remove sauce from chickendscn2834

(it is important to take all sauce off from Chicken)

 

 

Bake in a preheated 500 to 550 degrees F for 20 to 25 minutesdscn2835

三杯鶏 (Three cups chicken)

三杯鶏(Sanbeiji) is traditional Taiwanese dish. If you translated Sanbeiji into English, it means “Three cups chicken.” Historically, this dish’s name involves its ingredients, three different cups of sauces: soy source, rice wine, and sesame oil.Sanbeiji is very very popular food in Taiwan. It is said that if people went to restaurant, somebody surely orders it in Taiwan. It is spicy and tasteful!! You should try it!! You will like it!!

 

Let’s Start Cooking!

Chicken Thigh                 2

Spring onion                    2

Basils               5~10 leaves

Garlic                          1tsp

Ginger                         1tsp

Red papper                  1~2

Sesame oil                  2tbs

Rice wine                    2tbs

Soy sauce                    2tbs

Sugar                          2tsp

 

 

1. Cut chicken into cubes and spring onion into bite-size

 

2. Heat up the sesame oil in a pan with garlic and ginger, and fry till fragrantdscn2755

 

 

 

3. Add chicken and fry till it changes color.

 

4. Add spring onion and red pepper and fry 30 seconds. dscn2757

 

 


5. Add sugar and rice wine, and simmer 1~2 min with lid.dscn2759

 

 


6. When chicken is cooked, turn the heat to medium and add soy sauce fry till the sauce becomes thickening. dscn2761

Saag Chicken

 Saag Chicken is Indian style curry with Spinach and Chicken.

Taste very good with bread, rice, or Naan.

Spinach

300g

Onion

200g

Tomato

100g

Chicken

200g

Garlic (grated)

1tbs

Ginger(grated)

1tbs

Plain Yogurt

100g

 

 

Cumin Seeds

1tsp

Curry Powder (Garam masala)

1~2tbs

Salt

1tsp

A

 

Cumin Powder

1tsp

Coriander Powder

2tsp

Red Pepper

1tsp

Finely Chop Onions, and Puree Tomato and boiled Spinach in a blender separately.

Remove skin and Chop up chicken into cubes.  Then put a little Salt and Pepper (not included in ingredients) on chopped chicken and put these into Plain yogurtdscn2686

 

 

Heat the remaining oil in a pan and add cumin seeds. Add chopped onion, garlic, and Ginger in it and fry until lightly browndscn26821

 

 

Add Tomato and A, and cook 10 min on low heatdscn2685

 

 

Add Chicken and Yogurt. Simmer until the Chicken is tenderdscn2689

 

 

Add Spinach, 200cc water, salt, and Curry powder, and cook 20~30 min with low heatdscn2691
